- 2 large eggs
- 1 cup (240ml) buttermilk (or whole milk)
- 1 tsp vanilla extract
For the Honey Butter Topping:
- ¼ cup (57g) unsalted butter, softened
- 2 tbsp honey
- ¼ tsp salt (optional, for balance)

Preheat & Prepare the Pan:
- Preheat the oven to 400°F (200°C).
- Grease a 9-inch (23cm) square baking pan or cast-iron skillet.

Mix Dry Ingredients:
- In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.

Combine Wet Ingredients:
- In another bowl, whisk together melted butter, honey, eggs, buttermilk, and vanilla extract until smooth.

Mix the Batter:
- Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix—a few lumps are okay.

Bake the Cornbread:
- Pour the batter into the prepared pan and spread evenly.
- Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
