-
¼ cup powdered sugar

Instructions
-
Prepare the Crust:
-
Preheat oven to 325°F (163°C).
-
Mix crushed Oreos with melted butter and press into a greased 9-inch springform pan.
-
Bake for 10 minutes, then let cool.
-
-
Make the Cheesecake Filling:
-
In a large bowl, beat cream cheese and sugar until smooth.
-
Add eggs one at a time, mixing well after each addition.
-
Mix in vanilla extract, sour cream, and heavy cream until smooth.
-
Pour over the cooled crust and bake for 50–60 minutes until the center is slightly jiggly.
-
Turn off the oven, leave the door slightly open, and let the cheesecake cool for 1 hour. Then refrigerate for at least 4 hours.
-
-
Prepare the Strawberry Topping:
-
In a saucepan over medium heat, combine strawberries, sugar, cornstarch, and lemon juice.
-
Cook until thickened, then remove from heat and let cool completely.
-
-
Make the Shortcake Crumble:
-
Crush Oreos and divide them into two equal portions.
-
Mix one portion with melted butter and strawberry Jell-O until crumbly.
-
Keep the second portion plain (golden Oreo crumbs).
-
-
Assemble the Cheesecake:
-
Spread the strawberry topping over the chilled cheesecake.
-
Sprinkle the shortcake crumble over the top, mixing both golden and pink crumbs for a classic shortcake effect.
-
If using, pipe whipped cream around the edges.
-
-
Serve and Enjoy!
Notes
-
For a shortcut, use a store-bought cheesecake and simply add the strawberry topping and crumble.
-
The cheesecake can be made a day in advance for better flavor development.
-
